Happy Vegan Chocolate Chip Cookies 


2 cups unbleached flour
2 teaspoons baking powder
1/2 teaspoon salt
cinnamon to taste
vegan/carob or any chip you want - as much as you want 9-12 oz is usually good
1 cup raw sugar
1/4 coconut oil
1/4 vegetable oil
1 teaspoon vanilla
1/4 cup water

Directions:

It is best to start with all ingredients at room temperature. 

~ Pre-heat oven at 350 degrees F.
~ In a large bowl mix flour, baking powder, salt, cinnamon. 
~ Stir in chips.
~ In a medium bowl mix together sugar and oil. Add vanilla then water and mix well.
~ Add to dry mixture and stir together.
~ Spoon onto greased or un-greased cookie sheet, as needed.
~ Cook for 5 minutes, then rotate and cook for 4 more minutes. You want them o finish soft as the harden when they cool due to the nature of the coconut oil.
